Every single day, the same million-dollar question. There is a warp zone amongst us and it is every operating restaurant on the planet. The staff is tasting wine, you eat Mexican food 5 days a week at pre-shift - people are waiting by the door to sit down and eat and the place doesn’t open for another 12 minutes. You get yelled at about 60 different ways by 50 different people every night and walk for ten miles. 72 floors climbed. 180 wine and water glasses polished.
“How many on the book?” as if we have the power to predict what the night will or will not be. It’s a maze that after so many years there is no in or out just unpredictable nights to try and predict.
How do you get out
of the maze, if the
maze is the only thing
that supports you?
I wouldn’t trade it though. Knowing how to be that exhausted and still smile, still care, still try. Hospitality taught me how to be a human being - as represented in this work as the whole chipped pyramid and sparkly silver. But there is contrast - and confusion - and way more movement than necessary. I am the pyramid that made it out of the maze but still sits quietly sometimes, wondering what might be on the book. The predictions never leave.
